In the town of Soledad there are two industries: agriculture and a big state prison. There are also some wonderful wineries. Several years ago we were looking for some place for lunch, and at the time, Soledad didn't even have a McDonalds. (They do now.) As we were walking down the main street. (Only one side as there is no commerce on the other side of the street) we saw tacos and other Mexican food on the window. The front half of the store is a dry goods grocery store with vegetables, masa, cooking pans, corn husks, etc. In the back is a Mexican delicatessen. You want a taco? They make the tortilla right there and fill it up with VERY fresh ingredients. You take your soda out of the side refrigerators, and after you are done with your meal, you tell the guy in the front of the store in the grocery area what you ate and he tells you what you owe. Three tacos, one soda and one bottled water was $6.15 They are by far the best tacos I've ever had.
